Jet Lag-like
I feel like I'm back on jet lag! For the entire weekend I've been taking afternoon naps cuz of the weird hours i'm keeping.
Friday night I was up till 2am making food for mimi's shower and then up at 7:30am to finish up food and help set up. It was very lovely. The weather on saturday was nice...sunny but cool & breezy so not hot at all. Plus, we had canopies so we were in the shade. The decorations were great and the food, delish (if i do say so myself! hee hee). We had fresh fruit, mandarin orange salad (i didn't make), cranberry buttermilk scones with lemon curd & raspberry jam (also, not me), chocolate chip banana bread (again, not me), cucumber-mint sandwiches (finally, something i made!), ham-watercress sandwiches, chicken salad sandwiches with smoked almonds, lemon-lime mini muffins and apricot preserves over cream cheese w/crackers. mmMMmmm... The chicken salad sandwiches were a huge hit, so that recipe's definitely a keeper! It was also the most labor intensive (imagine shredding chicken by hand at like midnight). I know i shoulda used 2 forks or something, but chalk it down to brain deadness since i'd just finished making 3 batches of mini muffins (with enough leftover for a cake pan too) that took like 3-4 hours (i'm pretty slow around the kitchen)!!
So I totally crashed after the shower on saturday and then stayed up late watching a movie (till like 2am), but then had to wakeup at 8am for church the next day (yes, i know this was my own stupidity so i can't really complain). THEN, i had to send my cousin's kid to SFO at like 3am for his 6am flight (had to check-in 2 hrs early)....so i napped sunday afternoon and then stayed up to drive him to the airport. ot home at 4am this morning and crashed again. With the weird hours i've been keeping, i feel like i went through the entire weekend in a dream-like state. :)
